He knew this would be one of the last times he would see her before her death. But he also knew that the young woman had a better grasp of heaven than he did. She had a better grasp of what heaven would be like than many people twice her age, with twice as much experience and knowledge. She KNEW that something better was coming. At the funeral people were walking by the young woman's casket and they saw the pretty dress she was wearing and the fork placed in her right hand. Over and over, the pastor heard the question. "What's with the fork?" And over and over he smiled. During his message, the pastor told the people of the conversation he had with the young woman shortly before she died. He also told them about the fork and about what it symbolized to her. The pastor told the people how he could not stop thinking about the fork and told them that they probably would not be able to stop thinking about it either. He was right. So the next time you reach down for your fork, let it remind you ever so gently, that the best is yet to come. Friends are a very rare jewel, indeed. They make you smile and encourage you to succeed. They lend an ear, they share a word of praise, and they always want to open their hearts to us. Show your friends how much you care. The trees are sure getting pretty. We have a huge maple in the block just North of us that is bright red. Jodi just told me that we have 5 squirrels in the back yard picking up our pecans. She wants me to get out there with the new "Nut Roller" she just bought me. It's a spring that is about 6 inches in diameter that has been rolled to make a wheel with about a 4 foot handle on it. You roll it along the ground and when it passes over a nut the spring spreads just enough to let the nut into the spring. When it gets full you just spread the spring and dump the nuts out. No more bending over to pick up pecans. I can't bend over and pick them up anymore but with the "Nut Roller" I can wheel around in my wheelchair and pick them up. We usually get 5-6 paper grocery sacks of pecans from our 3 trees. Every body said that there would not be any this year as a result of the Christmas Day ice storm last year but we appear to have plenty. BS was 76 this morning. I sure like this new Lantus. Breakfast: A 2 egg serving of the 0 fat, 0 cholesterol, egg beaters. 2 pieces of sugar free whole grain whole wheat bread made into cinnamon toast with 0 fat, 0 cholesterol, 0 calorie liquid margarine, equal and cinnamon. Meats, I eat skinless chicken, fish, turkey, sirloin cut pork (boneless and fat free), one serving of lean beef a week. All grilled or baked. Virtually all of the veggies I eat are fresh. We are close enough to the Rio Grand Valley that we can get good fresh veggies all year round. I occasionally eat a small baked white or sweet potato with some of the liquid butter or some 0 fat sour cream on it. I do enjoy some pasta dishes. Jodi has developed several in which she uses some whole grain whole wheat pasta that she gets somewhere? She makes sphagetti and chili with ground turkey and by the time she gets through spicing it up you can't tell that she is not using beef. She makes some real good salad dressings with olive oil, vinegar and spices. It never comes out the same twice in a row but is always good. I've always really liked cheese. I have severly restricted my cheese intake in recent years. I eat the Greek Feta cheese. The local Italians here make a goats milk cheese that starts with the letter C and then is followed by the alphabet. All the locals call it gourd cheese since it comes out shaped like a small gourd with a flower on the top. It is a very dry cheese and has virtually no salt in it. It dries on the surface making sort of a self rind. I have no real idea as to the various nutrients since it is family made here locally. So I consume it in small quantities as a special treat. I consume very little carbohydrates as I see an almost immediate rise in my BS when I do.
